This is a double fermented and washed coffee from Oaxaca, Mexico. The flavor profile is stone-fruit with strong notes of peach and plum, ample honey-like sweetness, and a lovely delicate lemongrass. This is a complex coffee as a result from the care and effort put into the processing.
I know at this point you are wondering, what is a double fermented coffee? Well, here’s your answer…. Double fermentation is an extended process where the beans soak in water, fermenting for 12-24 hours where the beans absorb moisture and expand. Then they are rinsed and dried, once they are dry the beans go through another 12-24 fermentation phase before final drying.
It seems like a lot of work for some coffee, but the taste is so worth it! This is a jewel of a coffee, you don’t want to miss out on this limited quantity coffee.
